Tamilnadu style tomato rasam |  ತಮಿಳುನಾಡು ಶೈಲಿಯ ಟೊಮೇಟೊ ರಸಂ   Ingredients Required Cumin seeds - 1 tsp Pepper - 1 tsp Garlic - 5 to 6 cloves Tomato - 1 to 2 Tamarind (soak it in water for 10 min) - 1/2 lemon sized Coriander leaves - 2 tbsp Mustard seeds - 1/2 tsp Red chilli - 2 Jaggery - 2 tsp Salt - As per the taste  water - As much as required  Method of Preparation Initially take a mixi jar and make a fine paste of cumin seeds, pepper, garlic and tomato. Now shift the paste to a bowl , add tamarind water, salt, jaggery and coriander leaves. In this stage based on the rasam quantity add water to it and mix well . Now take a pan, add oil to it, once oil is heated add mustard seeds and red chillis and fry it for one min and shift it to rasam bowl. Now keep a rasam in stove and boil it lightly. NeerDose | ನೀರುದೋಸೆ | Neerdosa  Ingredients Required Rice - 2 cup Grated Coconut - 1 cup Salt - As per the taste Water - As much as required to get the right consistency Coconut oil - As much as required  Method of Preparation Soak rice in water for atleast 2 hours. Grind the soaked rice with salt and coconut initially without water. Then add water little by little and grind it to fine paste. Batter should be grinded to fine consistency such that when you touch it with your hands you should not get any particals in your hands. Now add required water and get the flowing consistency of the batter. Batter consistency should be like milk. Now pour the batter to hot  tawa and cook it from both the sides and add oil to it. Fruit Cake / ಫ್ರೂಟ್ ಕೇಕ್  Ingredients Required Maida  - 3/4  cup Cornflour - /4 cup Sugar Powder - 1/2 cup Condense milk - 1/4 cup Curd - 1/4 cup Vanilla essence - 1 tsp Cardamom and cinnamon powder - 1 tsp Cashew nut  - 2 tsp Almond - 4 to 10 Grapes - 2 tsp cherry - 5 to 6 Dates - 5 to 6 Baking Powder - 1/2 tsp Baking soda - 1/4 tsp milk - 3 to 4 tsp oil - 1/4 cup salt - 1/8 tsp Method of Preparation In a bowl prepare sugar water and add all chopped dry fruits to it ( can also add tutti fruity). Chocolate Cake / ಚಾಕಲೇಟ್ ಕೇಕ್  Ingredients Required Wheat flour  - 1/2 cup Maida  - 1/2  cup Sugar Powder - 3/4 cup Baking Powder - 1/2 tsp  Baking soda - 1/4 tsp  Vanilla essence - 1 tsp Milk - 4 tsp Curd - 1/4 cup Oil - 1/4 cup Coco Powder - 2 tbsp Method of Preparation Sieve wheat flour, maida, coco powder, baking powder and baking soda to a bowl or a plate. Now dry ingredients are ready. Take a bowl add curd and sugar, then whisk it well so that they are mixed well. Now add vanilla essence and oil to it, whisk it well. now wet ingredient is ready. At this stage, add half of the dry ingredients to wet ingredients and mix it well using cut and fold method, so that there are no lamps. Mixed Fruit Jam / ಮಿಶ್ರ ಹಣ್ಣುಗಳ ಜಾಮ್  Ingredients Required Pineapple - 1 cup Apple - 1 cup Muskmelon - 1 cup Papaya - 1 cup sugar - 1 cup Ghee - 2 tbsp Salt- 1/4 tsp Lemon juice - 3 to 4 drops  Water - As much as required  Method of Preparation Take a mixer jar add pineapple, grind it to puree using water and now shift it to a bowl. In similar way grind apple, Muskmelon and papaya to fine puree separetly   and shift them to same bowl. Now take a pan once pan is heated add ghee to it. Now add the mixed puree and mix them well. Allow them to cook until it reduces to half. Stir them occasionally. Now add salt and mix them well. Now add a sugar and stir them continuously until sugar dissolves.  Cook them for 5 minutes or until the mixture thickness to jam consistency. Heerekayi chatti| Ridge guard dosa | ಹೀರೆಕಾಯಿ ದೋಸಾ।ಹೀರೆಕಾಯಿ ಕಲ್ಲಲ್ಲಿ ಇಟ್ಟದ್ದು      Ingredients Required Rice - 1 cup Urad dal - 2 tsp Red chillies - 4 to 5 Asafoetida - 1/2 tsp Jaggery - 2 tbsp Salt - As per the taste Coriander seeds - 2 tbsp Cumin seeds - 1 tsp Tamarind  - 1/2 lemon sized Cocount - 4 to 5 tbsp Rich gourd  - 1 (Cut it to slices) Oil / ghee / butter - as per your taste Water - As much as required    Method of preparation Soak rice and urad dal for atleast 4 to 5 hours or overnight. Now take a mixi jar and add the rice, urad dal, red chillis, tamarind, jaggery, coriander seeds, cumin seeds, coconunt, Asafoetida and salt to it. Now add water to mixi jar and grind it to a fine paste of all ingredients. Batter consistency should not be very thin or very thick. it should be in medium consistency.  Cut the ridge gourd to slices , it should be in round shape. Rasam Powder / ಸಾರಿನ ಪುಡಿ  Ingredients Required Redchilli - 7 to 8 Coriander seeds - 1 cup Cumin Seeds - 1/2 cup Fenugreek seeds/ Methi seeds - 1/4 cup Oil - 2 tbsp Asafoetida - 1 tsp Method of Preparation Take a pan, add 1 to 2 tsp of oil to it. Once oil is heated add redchillies to it and fry them for a minute. Now keep the chillies aside to cool. In the same pan add Methi seeds and Cumin seeds and fry them for 30 seconds. Now add coriander seeds to the same pan and fry them all together for a minute. Keep the fried mixture aside to cool down. Once they cool down put redchillies, fried mixture and Asafoetida to a mixer jar. Now grind them all to fine powder. Rasam powder is ready, this can be stored in refrigerator for a year. Mixed Veg Gravy | ಮಿಶ್ರ ತರಕಾರಿಗಳ ಸಾಗು     Ingredients Required Cucumber - 1/2 cup Potato - 1/2 cup Mixed Vegetable or carrot and raddish - 1 cup Capsicum - 1/2 cup Bengal Roasted Gram - 1 tbsp Curry Leaves - 1 tsp Red Chilli powder - 1 tsp Vangibath Powder - 1 tsp Salt - As per the taste Turmeric powder - 1/2 tsp Mustard seeds - 1 tsp Oil - 2 Tbsp Asafoetida - 1/4 tsp Jaggery - 2 tsp Coriander leaves - 2 tbsp Water - As much as required    Method of preparation Crush the bengal gram using motor and pessel or using mixer grinder.                    Take a pan add oil to it.
