 Jackfruit Snack recipe | Jackfruit mulka | ಹಲಸಿನ ಹಣ್ಣಿನ ಮುಳುಕ  


This is a famous snack recipe prepared in dakshina kannada and kasaragod regions. Beautiful combination of jackfruit, jaggery and coconut makes it mouth watering.

Ingredients required

  • Jackfruit - 1/2 cup
  • jaggery - 1/4 cup
  • Grated coconut - 1/4 Cup
  • Salt - 3 pinch
  • Wheat flour - 2 Tbsp
  • Oil - for deep frying

Method of preparation

  • To a mixer jar add jackfruit, coconut, jaggery and salt.
  • Grind it to fine paste. try not to add water, but if required add 1 to 2 tsp of water.
  • Pour the mixture to a bowl and add 1 tbsp of wheat flour and check the consistency.
  • If required little more wheat flour can be added.
  • Get the batter to a thick pouring consistnecy.
  • Heat the oil to medium hot.
  • Now add little amount of small batches of batter to oil.
  • Fry them until they turn to brown color.
  • Delicious jackfruit snack is ready to serve.

ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು 

  • ಹಲಸಿನ ಹಣ್ಣು - ೧/೨ ಕಪ್ 
  • ಬೆಲ್ಲ - ೧/೪ ಕಪ್ 
  • ತೆಂಗಿನ ತುರಿ - ೧/೪ ಕಪ್ 
  • ಗೋಧಿ ಹಿಟ್ಟು - ೨ ಟೇಬಲ್ ಚಮಚ 
  • ಉಪ್ಪು - ೩ ಚಿಟಿಕೆ 
  • ಎಣ್ಣೆ - ಕರಿಯಲು 

ಮಾಡುವ ವಿಧಾನ 

  • ಒಂದು ಮಿಕ್ಸರ್ ಜಾರ್ ಗೆ ಹಲಸಿನ ಹಣ್ಣು , ತೆಂಗಿನ ತುರಿ, ಬೆಲ್ಲ ಹಾಗು ಉಪ್ಪು ಹಾಕಿ ನುಣ್ಣಗೆ ರುಬ್ಬಿ ಕೊಳ್ಳ ಬೇಕು. 
  • ಆದಷ್ಟು ನೀರಿಲ್ಲದೆ ರುಬ್ಬಿಕೊಳ್ಳಬೇಕು. ಬೇಕಾದರೆ ೧ ರಿಂದ ೨ ಚಮಚ ನೀರು ಹಾಕಿಕೊಳ್ಳಬಹುದು. 
  • ಇನ್ನು ಈ ಮಿಶ್ರಣಕ್ಕೆ ೧ ಟೇಬಲ್ ಚಮಚ ಗೋಧಿ ಹಿಟ್ಟು ಹಾಕಿ ಬೆರೆಸಬೇಕು. ಇನ್ನು ಅವಶ್ಯಕತೆ ಇದ್ದಲ್ಲಿ ಜಾಸ್ತಿ ಹಿಟ್ಟನ್ನು ಸೇರಿಸಿಕೊಳ್ಳಬಹುದು. 
  • ಪಕೋಡ ಹಿಟ್ಟಿಗಿಂತ ಸ್ವಲ್ಪ ಗಟ್ಟಿಯಾಗಿ ಹಿಟ್ಟನ್ನು ಕಲಸಿಕೊಳ್ಳಬೇಕು. 
  • ಇನ್ನು ಎಣ್ಣೆಯನ್ನು ಹದವಾಗಿ ಬಿಸಿ ಮಾಡಿಕೊಳ್ಳಬೇಕು. 
  • ಈ ಎಣ್ಣೆಗೆ ಪಕೋಡ ಬಿಡುವಂತೆ ಸ್ವಲ್ಪ ಸ್ವಲ್ಪ ಹಿಟ್ಟನ್ನು ಬಿಡಬೇಕು. 
  • ಇದು ಕಂದು ಬಣ್ಣ ಬಂದರೆ ಮುಳುಕ ತಯಾರಾಗುತದೆ.

Kokum Rasam

Kokum Rasam Ingredients Required Kokum - 2 to 3 Jaggery - 2 tbsp Salt - as per the taste Mustard seeds - 1/2 tsp whole red chillies - 3 to 4 oil - 1 tsp Water - 2 cups Curry Leaves - 4 to 5 Leaves Method of Preparation Soak kokum for 30 minutes as pre preparation. Take a pan, add oil and once oil is heated add mustard seeds and garlic. Wait until garlic changes its color to light brown and mustard splutters. Now add redchillies and curry leaves fry for 30 seconds. Now add kokum soaked water, add jaggery, salt and water then get them to boil. Once its boiled allow them to boil further till 7 to 8 min. Now Kokum rasam is ready. Note : Kokum rasam cane be served with hot rice or can also be drunk as a health drink.
