 Carrot Halwa | ಕ್ಯಾರಟ್ ಹಲ್ವ 



Carrot Halwa or carrot pudding is a delicious delicacy which can be prepared during the festival season. Hence winter is a season for carrots and also sweets are more favorite among all, this ia the best time to prepare carrot halwa. So to make use of the seasonal veggies i have shared an easy recipe of carrot halwa. Do try it and share your opinion.


Ingredients required

  • Grated (or finely chopped) Carrots - 2 Cups
  • Ghee or Clarified Butter - 1/2 Cup
  • Dryfruits of your choice - 1/4 cup
  • Sugar - 3/4 Cup
  • Milk - 1 Cup
  • Cardamom powder - 2 Pinch
  • Salt - 1 Pinch

Method of Preparation

  • To a pan add 1 tsp of ghee add dryfruits to it and fry then until they are roasted. Once they are fried keep them aside.
  • To the same pan add 1/4 cup of ghee (or you may need more ghee) and add grated carrot to it fry them until raw smell disappears. Cook it by closing the lid and keep on monitoring multiple times.
  • once the raw smell is disappeared, add milk, stir them and cook it until milk evaporates.
  • Now add sugar and mix it well , at this stage add pinch of salt.
  • Stir it occasionally so that it doesn't stick to the bottom.
  • Once the carrot halwa gets a shiny texture add cardamom powder stir  well and cook for another 1 minute. Now add fried dryfruits and mix them well. 
  • Delicious and tasty carrot halwa / pudding is ready to serve.

Tips

  • If carrot halwa should be stored for a longer time then add water instead of milk.
  • If carrot is chopped, amount of ghee required is less. But if grated carrot is used amount of ghee required is little more. So amount of ghee mentioned in ingredient list is sufficient for grated carrot.
  • Do not dry the halwa completely, it may become harder once it cools down.
  • Instead of pan this recipe can also prepared in cooker. In that case, once you remove the raw smell of carrot, add all other ingredients together and give 2 whistles.


ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು 

  • ತುರಿದ (ಇಲ್ಲ ಸಣ್ಣಕ್ಕೆ ಚಾಪರ್ ನಲ್ಲಿ ಹಚ್ಚಿದ ) ಕ್ಯಾರಟ್ - ೨ ಕಪ್ 
  • ತುಪ್ಪ - ೧/೨ ಕಪ್ 
  • ಡ್ರೈ ಫ್ರುಇಟ್ಸ್ - ೧/೪ ಕಪ್ 
  • ಸಕ್ಕರೆ - ೩/೪ ಕಪ್ 
  • ಹಾಲು - ೧ ಕಪ್ 
  • ಏಲಕ್ಕಿ ಪುಡಿ - ೨ ಚಿಟಕೆ 
  • ಉಪ್ಪು - ೧ ಚಿಟಕೆ 

ಮಾಡುವ ವಿಧಾನ 

  • ಮೊದಲಿಗೆ ಒಂದು ದಪ್ಪ ತಳದ ಬಾಣಲೆ ಬಿಸಿ ಮಾಡಿಕೊಂಡು ಅದಕ್ಕೆ ೧ ಟೀ ಚಮಚ ಆಗುವಷ್ಟು ಎಣ್ಣೆ ಹಾಕಿ ಅದರಲ್ಲಿ ಡ್ರೈ ಫ್ರುಇಟ್ಸ್ ಹುರಿದುಕೊಳ್ಳಬೇಕು. 
  • ನಂತರ ಡ್ರೈ ಫ್ರುಇಟ್ಸ್ ತೆಗೆದಿಡಬೇಕು. ಇನ್ನು ಅದೇ ಬಾಣಲೆಗೆ ೧/೪ ಕಪ್ ತುಪ್ಪ ಹಾಕಿ ಅದಕ್ಕೆ ತುರಿದ ಕ್ಯಾರಟ್ ಹಾಕಿ ಇದರ ಹಸಿ ವಾಸನೆ ಹೋಗುವ ತನಕ ಹುರಿಯಬೇಕು. 
  • ಇನ್ನು ಇದಕ್ಕೆ ಹಾಲು ಹಾಕಿ ಮತ್ತೆ ಹಾಲು ಕುಂದುವ ತನಕ ಬೇಯಿಸಿಕೊಳ್ಳಬೇಕು. 
  • ಇನ್ನು ಇದಕ್ಕೆ ಸಕ್ಕರೆ ಹಾಕಿ ಚೆನ್ನಾಗಿ ಬೆರೆಸಿ ನಂತರ ಚಿಟಕೆ ಉಪ್ಪು ಬೆರೆಸಿ ಕಲಸಬೇಕು. 
  • ಇನ್ನು ಕ್ಯಾರಟ್ ಹಲ್ವಾಕ್ಕೆ ಹಾಕಿರುವ ಸಕ್ಕರೆ ಪಾಕ ಬಂದು ಹಲ್ವಾದಲ್ಲಿ ಹೊಳಪು ಬರುವತನಕ ಬೇಯಿಸಬೇಕು. ಇನ್ನು ಏಲಕ್ಕಿ ಪುಡಿ ಹಾಕಿ ಬೆರೆಸಿ ಒಂದು  ನಿಮಿಷ ಮುಚ್ಚಿ ಬೇಯಿಸಬೇಕು. 
  • ಇನ್ನು ಹುರಿದ ಡ್ರೈ ಫ್ರುಇಟ್ಸ್  ಬೆರೆಸಿದರೆ ಕ್ಯಾರಟ್ ಹಲ್ವಾ ತಯಾರಾಗುತದೆ.
