 Kadle Chutney Pudi | Shenga chutney pudi | ಕಡ್ಲೆ/ ಶೇಂಗಾ ಚಟ್ನಿ ಪುಡಿ 



Ingredients Required

  • Peanut - 1 Cup
  • Channa Dal - 1/2 Cup
  • Tamarind - Gooseberry sized
  • Dry coconut - 2 Tbsp
  • Red chilli (Byadagi) - 10
  • Curry leaves - 1/4 Cup
  • Jaggery - 3 to 4 Tbsp
  • Asafoetida / Hing - 1 Pinch
  • Oil - 1 Tsp

Method of Preparation

  • Place a pan in gas, heat it, add ground nut and fry it until it changes it colors .
  • Now allow it to cool down.
  • To the same pan add channa dal and fry it in sim flame until it changes its color to light brown.
  • Allow them to cool.
  • To the same pan add 1 tsp of oil and add dried coconut and fry them for 2-3 minutes. Now add curry leaves and fry them until it becomes crisp and now add tamarind and fry them for a minute.
  • Now shift it to a plate and allow them to cool down.
  • To the same pan add 1 tsp oil and now add redchillies and fry them for 3 to 4 minutes. Allow them to cool down.
  •  Now to mixer jar add peanut and channa dal grind them to fine powder. To this mixture add all other fried items , hing, salt and jaggery. Grind them to fine powder.
  • Delicious and healthy kadle chutney pudi is ready. Serve it with hot rice and oil or idli or dosa.
Tips
  • Do not over grind the peanut mixture, hence it releases the oil it may get the paste texture.
  • Instead of dry coconut, coconut powder can also be used. Or if you don't like coconut this can be skipped.
  • Serve chutney pudi with coconut oil or ghee, It tastes even better.
  • Quantity of curry leaves and dried coconut can be changed based on your taste.

 ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು 

  • ಕಡ್ಲೆ / ಶೇಂಗಾ - ೧ ಕಪ್ 
  • ಕಡ್ಲೆ ಬೇಳೆ - ೧/೨ ಕಪ್ 
  • ಹುಣಸೆ ಹುಳಿ - ನೆಲ್ಲಿಕಾಯಿ ಗಾತ್ರ
  • ಕೊಬ್ಬರಿ - ೧/೪ ಕಪ್ 
  • ಕೆಂಪು ಮೆಣಸು (ಬ್ಯಾಡಗಿ ) - ೧೦
  • ಕರಿಬೇವು - ೧/೪ ಕಪ್ 
  • ಬೆಲ್ಲ - ೩ ರಿಂದ ೪ ಟೀ ಚಮಚ 
  • ಇಂಗು - ೧ ಚಿಟುಕೆ 
  • ಎಣ್ಣೆ - ೧ ಟೀ ಚಮಚ  

ಮಾಡುವ ವಿಧಾನ 

  • ಒಂದು ಬಾಣಲೆ ಬಿಸಿ ಮಾಡಿ ಅದಕ್ಕೆ ಕಡ್ಲೆ ಹಾಕಿ ಹುರಿಯಬೇಕು. ಇನ್ನು ಇದನ್ನು ತಣಿಯಲು ಬಿಡಬೇಕು. 
  • ಅದೇ ಬಾಣಲೆಗೆ ಕಡ್ಲೆ ಬೇಳೆ ಹಾಕಿ ಅದರ ಘಮ ಬರುವ ತನಕ ಹುರಿಯಬೇಕು. 
  • ಇದನ್ನು ಕೂಡ ತಣಿಯಲು ಬಿಡಬೇಕು. 
  • ಇನ್ನು ಅದೇ ಬಾಣಲೆಗೆ ಸ್ವಲ್ಪ ಎಣ್ಣೆ ಹಾಕಿ ಅದಕ್ಕೆ ಕೊಬ್ಬರಿ ಹಾಕಿ ಹುರಿಯಬೇಕು. ಇದಕ್ಕೆ ಕರಿಬೇವು ಹಾಕಿ ಅದು ಗರಿಯಾಗುವತನಕ ಹುರಿಯಬೇಕು. ಇನ್ನು ಇದಕ್ಕೆ ಹುಳಿ ಹಾಕಿ ೧ ನಿಮಿಷ ಹುರಿಯಬೇಕು. 
  • ಇದನ್ನು ಕೂಡ ತಣಿಯಲು ಬಿಡಬೇಕು. 
  •  ಇನ್ನು ಅದೇ ಬಾಣಲೆಗೆ ಸ್ವಲ್ಪ ಎಣ್ಣೆ ಹಾಕಿ ಅದಕ್ಕೆ ಬ್ಯಾಡಗಿ ಮೆಣಸು ಹಾಕಿ ೩ ರಿಂದ ೪ ನಿಮಿಷ ಹುರಿಯಬೇಕು. ಇನ್ನು ಇದನ್ನು ಕೂಡ ತಣಿಯಲು ಬಿಡಬೇಕು. 
  • ಎಲ್ಲ ಮಿಶ್ರಣ ತಣಿದ ಮೇಲೆ ಮೊದಲಿಗೆ ಕಡ್ಲೆ ಬೇಳೆ  ಮತ್ತು  ಕಡ್ಲೆ ಯನ್ನು ಮಿಕ್ಸರ್ ಗೆ ಹಾಕಿ ಪುಡಿ ಮಾಡಿಕೊಳ್ಳಬೇಕು. ಇನ್ನು ಇದಕ್ಕೆ ಉಳಿದ ಎಲ್ಲ ಹುರಿದ ವಸ್ತುಗಳನ್ನು ಹಾಕಿ, ಅದಕ್ಕೆ ಇಂಗು, ಉಪ್ಪು ಮತ್ತು ಬೆಲ್ಲ ಹಾಕಿ ಮತ್ತೆ ಪುಡಿ  ಮಾಡಿಕೊಳ್ಳಬೇಕು. 
  • ಈಗ ರುಚಿಕರವಾದ ಚಟ್ನಿ ಪುಡಿ ತಯಾರಾಗಿದೆ. ಇದನ್ನು ಅನ್ನ, ಚಪಾತಿ, ದೋಸೆ ಮತ್ತು ಇಡ್ಲಿ ಜೊತೆ ತಿನ್ನಬಹುದು. 
  • ಇದರ ಮೇಲೆ ಸ್ವಲ್ಪ ತೆಂಗಿನ ಎಣ್ಣೆ ಅಥವಾ ತುಪ್ಪ ಹಾಕಿ ತಿಂದರೆ ಇದರ ರುಚಿ ಬಹಳ ಸೊಗಸಾಗಿ ಇರುತದೆ.
