Tomato Gojju | ಟೊಮೇಟೊ  ಗೊಜ್ಜು 




Tomato gojju is a traditional south indian side dish for idli and dosa. But it also goes well with chapathi. Best combination is with rava idli and appe's. This is a simple combination of tomato and rasam powder or sambhar powder with the nuttiness of sesame and groundnut. This can be pre prepared and stored in refrigerator for 2 to 3 days. Ingredients Required

  • Tomato - 2
  • Onion - 1
  • Coriander leaves - 1 Tbsp
  • Groundnut - 2 Tsp
  • White Sesame seeds - 1 Tsp
  • Water - As per the requirement
  • Mustard seeds - 1/2 Tsp
  • Jaggery - 1 Tsp
  • Salt - As per the taste
  • Oil - 1 Tsp
  • Curry Leaves - 1 Tsp
  • Rasam Powder / sambhar powder - 2 Tsp

Method of preparation 

  • Chop tomatoes to dices, onions and coriander leaves to fine pieces.
  • To a pan add 2 cups of water, once water is hot add chopped tomatoes and cook them for 5 minutes or until tomatoes become softer.
  • Heat another pan add groundnuts and roast them until they cracks. Shift this to a plate. To the same pan add sesame seeds and fry them until they splutters, now shift this to same plate and allow them to cool down.
  • Once this mixture has come to room temperature grind them to fine powder in a mixer jar.
  • Now check with tomatoes, if they are cooked switch off the flame and allow them to cool. Once they cool down pour them to a mixer jar , add rasam powder and coriander leaves to them and grind them to fine paste.
  • Take another pan, add oil to it, heat it. Once it is hot add mustard seeds, as mustard seeds splutters add curry leaves and fry them for a while, now add finely chopped onions and two pinch of salt, fry them until onions becomes soft.
  • Once onions are soft add tomato paste to it with little water.   Now add salt as per the taste and jaggery. Mix them well and allow them to boil.
  • Once they get a boil, simmer the heat and cook it for 5 minutes. 
  • After 5 minutes add groundnut and sesame seed powder and mix them well. Now again cook for 1 minute. Healthy and delicious Tomato gojju is ready.
  • Serve it with idli, rava idli, appo, dose, rice and chapti. It tastes good with every thing.

Tips
  • Instead of Rasam powder sambhar powder also can be added
  • After cooking tomatoes, do not throw the cooked water, use it later instead of water. Or this can be refrigerated and can be used in any curry preparation.
  • This gojju tastes even better with little more jaggery.
  • This quantity serves for 3 people.
  • With coriander leaves and rasam powder if required 2 tsp of coconut can also be added. 
  • If this should be prepared for more people increase the quantity of its in the below proportion.
  • Tomato: Rasam powder : groundnut : sesame = 1 : 1 Tsp : 1 Tsp : 1/2 Tsp

ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು 

  • ಟೊಮೇಟೊ - ೨
  • ಈರುಳ್ಳಿ / ನೀರುಳ್ಳಿ - ೧
  • ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು - ೧ ಟೇಬಲ್ ಚಮಚ 
  • ಕಡ್ಲೆ ಬೀಜ - ೨ ಟೀ ಚಮಚ 
  • ಬಿಳಿ ಎಳ್ಳು - ೧ ಟೀ ಚಮಚ 
  • ನೀರು - ಅವಶ್ಯಕತೆಗನುಸಾರವಾಗಿ 
  • ಸಾಸಿವೆ - ೧/೨ ಟೀ ಚಮಚ 
  • ಬೆಲ್ಲ - ೧ ಟೀ ಚಮಚ 
  • ಉಪ್ಪು - ರುಚಿಗೆ ತಕ್ಕಷ್ಟು 
  • ಎಣ್ಣೆ - ೧ ಟೀ ಚಮಚ 
  • ಕರಿ ಬೇವು / ಬೆಸೊಪ್ಪು - ೧ ಟೀ ಚಮಚ 
  • ಸಾರಿನ ಪುಡಿ / ಸಾಂಭಾರ್ ಪುಡಿ - ೨ ಟೀ ಚಮಚ

ಮಾಡುವ ವಿಧಾನ 

  • ಒಂದು ಬಾಣಲೆ ಗೆ ೨ ಗ್ಲಾಸ್ ನೀರು ಹಾಕಿ ಅದು ಬಿಸಿಯಾಗುತಿದ್ದಂತೆ ಅದಕ್ಕೆ ತುಂಡರಿಸಿದ ಟೊಮೇಟೊ ಹಾಕಿ ಬೇಯಲು ಬಿಡಬೇಕು. 
  • ಇನೂ ಒಂದು ಬಾಣಲೆ ತೆಗೆದು ಅದನ್ನು ಬಿಸಿ ಮಾಡಬೇಕು. ಇದಕ್ಕೆ ಕಡ್ಲೆ ಬೀಜ ಹಾಕಿ ಚಿಟ ಪಟ ಅನ್ನೋತನಕ ಹುರಿಯಬೇಕು. ಇದನ್ನು ಒಂದು ಬಟ್ಟಲಲ್ಲಿ ತಣಿಯಲು ಬಿಡಬೇಕು. ಇನ್ನು ಅದೇ ಬಾಣಲೆಗೆ ಎಳ್ಳು ಹಾಕಿ ಅದು ಚಿಟ ಪಟ  ಅನ್ನೋ ತನಕ ಹುರಿದು ಇದನ್ನು ಕೂಡ ಅದೇ ಬಟ್ಟಲಿಗೆ ಹಾಕಬೇಕು. 
  • ಈ ಮಿಶ್ರಣ ತಣಿದ ನಂತರ ಮಿಕ್ಸರ್ ಜಾರ್ ನಲ್ಲಿ ಸಣ್ಣಕ್ಕೆ ಪುಡಿ ಮಾಡಿಕೊಳ್ಳಬೇಕು. 
  • ಈಗ ಬೆಂದ ಟೊಮೇಟೊ ವನ್ನು ತಣಿಸಿ ಅದನ್ನು ಮಿಕ್ಸರ್ ಜಾರ್ ಗೆ ಹಾಕಬೇಕು. ಇದಕ್ಕೆ ಸಾರಿನ ಪುಡಿ ಮತ್ತು ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು ಹಾಕಿ ನುಣ್ಣಗೆ ರುಬ್ಬಿಕೊಳ್ಳಬೇಕು. 
  • ಈಗ ಇನ್ನೊಂದು ಬಾಣಲೆ ಯನ್ನು ಬಿಸಿ ಮಾಡಿ ಅದಕ್ಕೆ ಎಣ್ಣೆ ಹಾಕಿ ಅದು ಬಿಸಿಯಾಗುತಿದ್ದಂತೆ ಅದಕ್ಕೆ ಸಾಸಿವೆ ಹಾಕಿ ಸಿಡಿಸಬೇಕು. ಇನ್ನು ಇದಕ್ಕೆ ಕರಿಬೇವು ಹಾಕಿ ಅದನ್ನು ಹುರಿಯಬೇಕು. ಇನ್ನು ಇದಕ್ಕೆ ಸಣ್ಣಕ್ಕೆ ಹಚ್ಚಿದ ಈರುಳ್ಳಿ ಹಾಕಿ ಹುರಿಯಬೇಕು. ಇದು ಮೃದು ಆಗಲು ಸ್ವಲ್ಪ ಉಪ್ಪು ಹಾಕಿ. ಹೀಗೆ ಈರುಳ್ಳಿ ಮೃದು ಆಗುತಿದ್ದಂತೆ ಇದಕ್ಕೆ ಟೊಮೇಟೊ ಮಿಶ್ರಣವನ್ನು ಹಾಕಿ ತದನಂತರ ಸ್ವಲ್ಪ್ ನೀರು ಹಾಕಿ ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ಉಪ್ಪು ಮಾತು ಬೆಲ್ಲ ಹಾಕಬೇಕು. 
  • ಈ ಮಿಶ್ರಣವನ್ನು ಕುಡಿಯಲು ಬಿಡಬೇಕು. ಇದು ಒಂದು ಕುಡಿ ಬಂದಾಗ ಉರಿಯನ್ನು ಸಣ್ಣ ಮಾಡಿ ೫ ನಿಮಿಷ ಕುಡಿಯಲು ಬಿಡಬೇಕು. ಇನ್ನು ಇದಕ್ಕೆ ಕಡ್ಲೆ ಮತ್ತು ಎಳ್ಳಿನ ಪುಡಿ ಹಾಕಿ ೧ ನಿಮಿಷ ಕುದಿಸಿದರೆ ಟೊಮೇಟೊ ಗೊಜ್ಜು ತಯಾರಾಗುತ್ತದೆ. 
  • ಇದನ್ನು ಇಡ್ಲಿ, ರವ ಇಡ್ಲಿ, ದೋಸೆ, ಚಪಾತಿ, ಅಪ್ಪೋ ಮತ್ತು ಅನ್ನದ ಜೊತೆ ಸವಿಯಲು ತುಂಬ ರುಚಿಕರವಾಗಿರುತ್ತದೆ.

Kokum Rasam

Kokum Rasam Ingredients Required Kokum - 2 to 3 Jaggery - 2 tbsp Salt - as per the taste Mustard seeds - 1/2 tsp whole red chillies - 3 to 4 oil - 1 tsp Water - 2 cups Curry Leaves - 4 to 5 Leaves Method of Preparation Soak kokum for 30 minutes as pre preparation. Take a pan, add oil and once oil is heated add mustard seeds and garlic. Wait until garlic changes its color to light brown and mustard splutters. Now add redchillies and curry leaves fry for 30 seconds. Now add kokum soaked water, add jaggery, salt and water then get them to boil. Once its boiled allow them to boil further till 7 to 8 min. Now Kokum rasam is ready. Note : Kokum rasam cane be served with hot rice or can also be drunk as a health drink.
