Athrasa is a sweet recipe. It is very tasty. In the navarathri time we can do this recipe for naivedyam. One of the favorite recipe of Lord duga.  I have done this recipe with rajmudi rice. If you want you can do this recipe with dosa rice it will also give nice taste. This recipe is a combination of rice and jaggery. I have used sesame seeds. you can also add gasgase. Once if you prepare this recipe you can store  for long time.  Try this recipe and give the feedback. 

Ingredients required :

  • Rajumdi rice - 2 cup
  • Jaggery - 2 cup
  • Sesame seeds - 2 tsp
  • Ghee - 1 tsp
  • Oil - for deep fry 
  • Water - As per the requirement

Method of Preparation : 

  • Initially soak the rice in water overnight.
  • After that wash and strain the water.
  • Spread the rice in cloth and allow them to dry for 80%.
  • Grind them to a fine powder and sieve it.
  • Now take a kadhai, add jaggery and water to it.
  • Boil to get a jaggery syrup. We can check whether the syrup is in perfect consistency.
  • To check the consistency take water in a small bowl add-drop jaggery syrup to it, if it is possible to make a small ball size then it is a perfect syrup.
  • Now add sesame seeds and mix them well.
  • Next, switch off the flame and add rice flour little by little and mix them well.
  • Shift it to a bowl and add ghee to it.
  • Close the bowl and keep aside overnight.
  • The next day take plastic and apply ghee to it. Now take a small portion from the dough make a round shape and flatten it. 
  • Meanwhile, keep oil for deep fry. It should be in medium flame.
  • Once the oil is heated add dough and fries for both sides.
  • Now your athrasa or Kajjaya is ready to serve. 

ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು :

  • ರಾಜಮುಡಿ ಅಕ್ಕಿ - ೨ ಕಪ್ 
  • ಬೆಲ್ಲ - ೨ ಕಪ್ 
  • ಎಳ್ಳು - ೨ ಟೀ ಚಮಚ 
  • ತುಪ್ಪ - ೧ ಟೀ ಚಮಚ 
  • ಎಣ್ಣೆ - ಕರಿಯಲು 
  • ನೀರು - ಬೇಕಾದಷ್ಟು 

ಮಾಡುವ ವಿಧಾನ :

  • ಮೊದಲಿಗೆ ಅಕ್ಕಿಯನ್ನು ಒಂದು ದಿನಗಳ ಕಾಲ ನೀರಲ್ಲಿ ನೆನೆ ಹಾಕಬೇಕು. 
  • ನಂತರ ಅದನ್ನು ನೀರಿನಿಂದ  ಬೇರ್ಪಡಿಸಿ ಒಂದು ಬಟ್ಟೆಯಲ್ಲಿ ಒಣಗಲು ಹಾಕಬೇಕು. 
  • ೮೦% ಒಣಗಿದ ನಂತರ ಅದನ್ನು ಮಿಕ್ಸಿ ಜಾರ್ ಗೆ ಹಾಕಿ ಪುಡಿ ಮಾಡಿಕೊಳ್ಳಬೇಕು. 
  • ಮತ್ತೆ ಅದನ್ನು ಜರಡಿ ಹಿಡಿದು ಸೈಡ್ ಅಲ್ಲಿ ಇಟ್ಟುಕೊಳ್ಳಬೇಕು. 
  • ಈಗ ಒಂದು ಪಾತ್ರೆ ತೆಗೆದುಕೊಂಡು ಅದಕ್ಕೆ ಬೆಲ್ಲ ಮತ್ತು ನೀರು ಹಾಕಿ ಗ್ಯಾಸ್ ಆನ್ ಮಾಡಬೇಕು. 
  • ಬೆಲ್ಲ ಪಾಕ ಬಂದನಂತರ ಅದಕ್ಕೆ ಎಳ್ಳು ಹಾಕಿ ಮಿಕ್ಸ್ ಮಾಡಿ ಗ್ಯಾಸ್ ಆರಿಸಬೇಕು. 
  • ನಂತರ ಅದಕ್ಕೆ ಅಕ್ಕಿ ಹುಡಿ ಯನ್ನು ಸ್ವಲ್ಪ ಸ್ವಲ್ಪವೇ ಹಾಕಿ ಮಿಕ್ಸ್ ಮಾಡಿಕೊಳ್ಳಬೇಕು. 
  • ಈಗ ಅದಕ್ಕೆ ತುಪ್ಪ ಹಾಕಿ ಒಂದು ದಿನಗಳ ಕಾಲ ಬಿಡಬೇಕು. 
  • ಮರುದಿನ ಒಂದು ಬಾಣಲೆಯಲ್ಲಿ ಕರಿಯಲು ಎಣ್ಣೆ ಇಡಬೇಕು. 
  • ಈಗ ಮಿಶ್ರಣದಿಂದ ಒಂದು ಸಣ್ಣ ಚೆಂಡಿನಾಕಾರದ ಮಿಶ್ರಣವನ್ನು ತೆಗೆದು ಅದನ್ನು ತಟ್ಟಿ ಇಟ್ಟುಕೊಳ್ಳಬೇಕು. 
  • ಎಣ್ಣೆ ಕಾದ ನಂತರ ಅದಕ್ಕೆ ಬಿಟ್ಟು ೨ ಬದಿ ಕಾಯಿಸಿದರೆ ಕಜ್ಜಾಯ ತಯಾರಾಗಿದೆ. 
Note : 
  • You can use dosa rice instead of rajmudi rice.
  • If you soak rice longer time your kajjaya will come very nice. 
  • Don't use coconut oil for deep fry.

It is very easy to prepare, the only thing is you have to soak the Bengal gram 3 to 4 hours before.
