 Halubayi | ಹಾಲುಬಾಯಿ 


Halubayi is a traditional south indian dish. Mostly its prepared as prasadam for festive occasions. It is said that halubayi is a favourite dish of devi. So its more often prepared as prasadam during durganamaskara puja, Navarathri and trikala pooja. This dish is also prepared during other auspicious occasions. Combination of jaggery with rice and coconut makes it more special prasadam. 

Ingredients Required

  • Soaked Rice - 1 cup
  • Jaggery - 1 cup
  • Coconut - 3/4 cup
  • Salt - 2 Pinch
  • Ghee - 1/4 cup
  • Water - As per the requirement

Method of Preparation

  • Soak Rice for atleast 4 hours. Drain the water from soaked rice. Add Soaked rice to mixer jar, initially grind it without adding water.
  • After grinding now add coconut to mixer jar and add some water. Grind them all together to make fine paste. 
  • Heat a heavy bottom pan, add grinded mixture to it. Flame should be off.
  • Now add jaggery and mix them well by adding more water. 
  • Once jaggery dissolves, switch on the flame. Add salt.
  • Stir it continiously until all the mixture combines together.
  • In between stirring, add little by little ghee to it.
  • Once all the mixture combines well switch off the flame.
  • Grease a plate with ghee, spread the mixture on it.
  • Spread halubayi evenly.
  • Allow it to cool, then cut it to desired shape.
  • Delicious and more auspicious halubayi is ready to serve.

Tips 

  • Cardommom powder can also be added to enhance the flavour.
  • Instead of adding jaggery to grinded mixture, jaggery can be dissolved in water and then on top of it grinded mixture can be added.
  • If there is no much time then its ok to soak rice only for 2 hours.

ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು 

  • ನೆನೆಸಿರುವ ಅಕ್ಕಿ - ೧ ಕಪ್ 
  • ಬೆಲ್ಲ - ೧ ಕಪ್ 
  • ತೆಂಗಿನ ತುರಿ - ೩/೪ ಕಪ್ 
  • ಉಪ್ಪು - ೨ ಚಿಟಿಕೆ 
  • ತುಪ್ಪ - ೧/೪ ಕಪ್ 
  • ನೀರು - ಅವಶ್ಯಕತೆಗೆ ಅನುಸಾರವಾಗಿ 

ಮಾಡುವ ವಿಧಾನ 

  • ಅಕ್ಕಿಯನ್ನು ೪ ಗಂಟೆಗಳ ಕಾಲ ನೆನೆಸಿಡಬೇಕು. ಇನ್ನು ಅದರ ನೀರು ಬಸಿದು ಮಿಕ್ಸರ್ ಜಾರ್ ನಲ್ಲಿ ನೀರು ಬೆರೆಸದೆ ರುಬ್ಬಬೇಕು. 
  • ಇನ್ನು ಅದಕ್ಕೆ ತೆಂಗಿನ ತೂರಿ, ನೀರು ಹಾಕಿ ನುಣ್ಣಗೆ ರುಬ್ಬಬೇಕು. 
  • ಈ ಮಿಶ್ರಣವನ್ನು ದಪ್ಪ ತಳದ ಬಾಣಲೆಗೆ ಹಾಕಿ ಅದಕ್ಕೆ ಬೆಲ್ಲ ಹಾಕಿ ಸ್ವಲ್ಪ ನೀರಿನೊಂದಿಗೆ ಬೆರೆಸಬೇಕು. 
  • ಇನ್ನು ಗ್ಯಾಸ್ ಆನ್ ಮಾಡಿ  ಸ್ವಲ್ಪ ಉಪ್ಪು ಹಾಕಿ ಚೆನ್ನಾಗಿ ಕಯ್ಯಿ ಆಡಿಸಬೇಕು . ೫ ನಿಮಿಷದ ನಂತರ ಸ್ವಲ್ಪ ಸ್ವಲ್ಪವಾಗಿ ತುಪ್ಪ ಹಾಕುತ್ತಾ  ಚೆನ್ನಾಗಿ ಮಗುಚ ಬೇಕು . 
  • ಮಿಶ್ರಣ ತಳ ಬಿಡುತ್ತಾ ಬಂದರೆ ಹಾಲುಬಾಯಿ ತಯಾರಾಗಿದೆ ಎಂದರ್ಥ. 
  • ಒಂದು ಪ್ಲೇಟ್ ಗೆ ತುಪ್ಪ ಸವಾರಿ, ಅದಕ್ಕೆ ತಯಾರಾದ ಹಾಲುಬಾಯಿ ಹಾಕಿ ಸಮನಾಗಿ ಹರಡಬೇಕು. 
  • ಇನ್ನು ಇದು ತಣಿದ ನಂತರ ಬೇಕಾದ ಆಕೃತಿಗೆ ತುಂಡು ಮಾಡಿಕೊಂಡರೆ ಹಾಲು ಬಾಯಿ ತಯಾರಾಗುತದೆ.
