Coconut Laddo । ತೆಂಗಿನಕಾಯಿ ಲಾಡೂ 


A Special coconut laddoo which can be offered as prasadam. Easy and tasty recipe. Do give try.

Ingredients required :

  • Milk - 2 cup
  • Sugar - 1/2 cup
  • Coconut - 1 cup 
  • ghee - 3 tsp
  • Coconut powder or dry coconut - 1/4 cup (optional)

Method of Preparation :

  • Initially take a bowl add milk to it. Once it is boiled add sugar and mix them well.
  • Let it boil until milk becomes half.
  • Meanwhile take one pan add ghee to it and also add coconut, fry until its moisture goes or else if you have coconut powder you can use that .
  • If your using coconut powder you don't want to fry it. You just make it hot.
  • Now if your milk became half add these fried coconut or coconut powder.
  • Leave it to boil 5 to 7 minutes or else till the coconut absorbs the milk.
  • Meanwhile grace one plate with ghee and keep ready.
  • Once coconut absorbs all the milk shift it to a graced plate and leave them to cool down.
  • Once it is cool down make a ball size and roll it in dry coconut or coconut powder(optional).
  • Now your coconut ladoo is ready. 

Tips:

  • If you have dry coconut powder, skip the coconut frying process.
  • Can also use little less milk, to get perfect consitency.

ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು :

  • ಹಾಲು - ೨ ಕಪ್ 
  • ಸಕ್ಕರೆ - ೧/೨ ಕಪ್ 
  • ತೆಂಗಿನಕಾಯಿ ತುರಿ - ೧ ಕಪ್ 
  • ಒಣ ಕೊಬ್ಬರಿ ತುರಿ ಅಥವಾ ಕೊಬ್ಬರಿ ತೂರಿ - ೧/೪ ಕಪ್ 
  • ತುಪ್ಪ - ೩ ಟೀ ಚಮಚ 

ಮಾಡುವ ವಿಧಾನ :

  • ಮೊದಲಿಗೆ ಒಂದು ಪಾತ್ರದಲ್ಲಿ ಹಾಲು ಹಾಕಿ ಕುದಿಸಿ . ಹಾಲು ಕುದ್ದ ನಂತರ ಅದಕ್ಕೆ ಸಕ್ಕರೆ ಹಾಕಿ ಚೆನ್ನಾಗಿ ಮಿಕ್ಸ್ ಮಾಡಿಕೊಳ್ಳಿ. 
  • ಈಗ ಸಕ್ಕರೆ ಹಾಕಿದ ಹಾಲು ಅರ್ಧ ಆಗುವ ತನಕ ಕುದಿಸಿಕೊಳ್ಳಿ. 
  • ಒಟ್ಟಿಗೆ ಒಂದು ಪಾನ್  ತೆಗೆದುಕೊಂಡು ಅದಕ್ಕೆ ತುಪ್ಪ ಹಾಕಿ ಮತ್ತು ತೆಂಗಿನಕಾಯಿ ತುರಿ ಹಾಕಿ ಅದರಲ್ಲಿ ಇರುವ ತೇವಾಂಶ ಹೋಗುವ ತನಕ ಹುರಿಡಿಕೊಳ್ಳಬೇಕು. 
  • ನಿಮ್ಮ ಹತ್ರ ತೆಂಗಿನಕಾಯಿ ಪುಡಿ ಇದ್ದರೆ ಅದನ್ನು ಉಪಯೋಗಿಸಬಹುದು. ಅದನ್ನು ಬಿಸಿ ಮಾಡಿದರೆ ಸಾಕು. 
  • ಈಗ ಹಾಲು ಅರ್ಧ ಆದನಂತರ ಅದಕ್ಕೆ ತೆಂಗಿನಕಾಯಿ ತುರಿ ಹಾಕಿ ಮತ್ತೆ ಕುದಿಸಬೇಕು. 
  • ಎಷ್ಟು ಹೊತ್ತು ಕುದಿಸಬೇಕು ಅಂದ್ರೆ ತೆಂಗಿನಕಾಯಿ; ಹಾಲನ್ನು ಹೀರಿಕೊಳ್ಳುವ ತನಕ ಕುದಿಸಬೇಕು. 
  • ಈಗ ಒಂದು ಪಾತ್ರೆಗೆ ತುಪ್ಪ ಸವರಿ ಇಟ್ಟ್ಕೊಳ್ಳಬೇಕು. ಇದು ಕುದಿಸಿದ ನಂತರ ಅದನ್ನು ತುಪ್ಪ ಸವರಿದ ಪಾತ್ರೆಗೆ ಹಾಕಿ ಆರಲು ಬಿಡಬೇಕು. 
  • ಆರಿದ ನಂತರ ಅದನ್ನು ಉಂಡೆ ಕಟ್ಟಿ ಒಣ ಕೊಬ್ಬರಿ ಅಥವಾ ತೆಂಗಿನಕಾಯಿ ಪುಡಿ ಯಲ್ಲಿ ರೋಲ್ ಮಾಡಿದರೆ ತೆಂಗಿನಕಾಯಿ ಉಂಡೆ ತಯಾರಾಗಿದೆ.

Kokum Rasam

Kokum Rasam Ingredients Required Kokum - 2 to 3 Jaggery - 2 tbsp Salt - as per the taste Mustard seeds - 1/2 tsp whole red chillies - 3 to 4 oil - 1 tsp Water - 2 cups Curry Leaves - 4 to 5 Leaves Method of Preparation Soak kokum for 30 minutes as pre preparation. Take a pan, add oil and once oil is heated add mustard seeds and garlic. Wait until garlic changes its color to light brown and mustard splutters. Now add redchillies and curry leaves fry for 30 seconds. Now add kokum soaked water, add jaggery, salt and water then get them to boil. Once its boiled allow them to boil further till 7 to 8 min. Now Kokum rasam is ready. Note : Kokum rasam cane be served with hot rice or can also be drunk as a health drink.
