Mango mensakayi is a traditianol recipe. It is very famous in mangalore as well as in udupi district. In the udupi it is also called as mudduli recipe.Mangalore and udupi people will do this recipe in almost all the functions for lunch. This menaskayi taste should be a mixture of sweet and sour. You can replace the mango by pineapple or banana or bitter gourd. If your replacing banana or anyother   you required tamarind to it. you should boil the vegetable with tamarind water. Mango contains sour, so tamarind is not required in this case. This recipe suits for rice, ottu shyavige  and also suits for kotte kadubu. 

Ingredients required :

  • Mango - 1 to 2
  • black sesame - 3/4 tsp
  • Red chili - 2 to 3
  • Grated coconut - 1 big cup
  • Coconut oil - 1 tsp
  •  Salt - As per the taste
  • Jaggery - 5 tsp
  • Water - As per the requirement

Method of Preparation :

  • Initially cut the mangoes into small pieces,  put it to one bowl.
  • Add water, salt, jaggery, turmeric powder and allow them to boil.
  • Meanwhile in another side, take a pan add black sesame and fry it until it sputters without adding any oil.
  • Now shift sesame to other plate. Now add oil to same pan, once oil is heated add red chili and fry it for 20 seconds.
  • After 20 seconds switch off the flame.
  • Now take a mixi jar, add grated coconut, red chili and black sesame, make a fine paste using water.
  • Now if your mango is boiled add this paste to it, add salt for taste, add water to adjust the consistency and boil it to 5 minutes. 
  • Now your mango menaskayi is ready.

ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು :

  • ಮಾವಿನ ಹಣ್ಣು - ೧ ರಿಂದ ೨
  • ಕಪ್ಪು ಎಳ್ಳು - ೩/೪ ಟೀ ಚಮಚ 
  • ಕೆಂಪು ಮೆಣಸು - ೨ ರಿಂದ ೩
  • ತೆಂಗಿನ(ಕೊಬ್ಬರಿ) ಎಣ್ಣೆ - ೧/೨ ಟೀ ಚಮಚ 
  • ತೆಂಗಿನ ತುರಿ - ೧ ದೊಡ್ಡ ಕಪ್ (೨ ಸಣ್ಣ ಕಪ್ )
  • ಉಪ್ಪು - ರುಚಿಗೆ ತಕ್ಕಷ್ಟು 
  • ಬೆಲ್ಲ - ೫ ಟೀ ಚಮಚ 
  • ನೀರು - ಅವಶ್ಯಕತೆಗೆ  ಅನುಸಾರವಾಗಿ 

ಮಾಡುವ ವಿಧಾನ :

  • ಮೊದಲಿಗೆ ಮಾವಿನ ಹಣ್ಣನ್ನು ಸಣ್ಣದಾಗಿ ತುಂಡು ಮಾಡಿ ಇಟ್ಟುಕೊಳ್ಳಬೇಕು. 
  • ಈಗ ಒಂದು ಪಾತ್ರೆಗೆ ಕಟ್ ಮಾಡಿದ ಮಾವಿನಕಾಯಿ, ಉಪ್ಪು, ಬೆಲ್ಲ ಮತ್ತು ಅರಶಿನ ಹಾಕಿ  ಬೇಯಿಸಕೊಳ್ಳಬೇಕು . 
  • ಅದರೊಟ್ಟಿಗೆ ಇನ್ನೊಂದು ಬದಿಯಲ್ಲಿ ಒಂದು ಬಾಣಲೆ ಇಟ್ಟು ಸ್ಟವ್ ಆನ್ ಮಾಡಿ. 
  • ಈಗ ಅದಕ್ಕೆ ಕಪ್ಪು ಎಳ್ಳು ಹಾಕಿ, ಹುರಿದುಕೊಳ್ಳಬೇಕು. ನಂತರ ಅದನ್ನು ಇನ್ನೊಂದು ಪ್ಲೇಟ್ ಗೆ ಶಿಫ್ಟ್ ಮಾಡಿ . 
  • ಈಗ ಅದೇ ಬಾಣಲೆಗೆ ಎಣ್ಣೆ ಹಾಕಿ, ಎಣ್ಣೆ ಬಿಸಿ ಆದ ನಂತರ ಅದಕ್ಕೆ ಕೆಂಪುಮೆಣಸು ಹಾಕಿ ೨೦ ಸೆಕೆಂಡುಗಳ ಕಾಲ ಹುರಿಯಬೇಕು. 
  • ಈಗ ಒಂದು ಮಿಕ್ಸಿ ಜಾರ್ ತೆಗೆದುಕೊಂಡು ಅದಕ್ಕೆ ಹುರಿದ ಎಳ್ಳು, ತೆಂಗಿನಕಾಯಿ ತುರಿ, ಕೆಂಪುಮೆಣಸು ಹಾಕಿ ನುಣ್ಣಗೆ ರುಬ್ಬಿಕೊಳ್ಳಿ. 
  • ಮಾವಿನಕಾಯಿ ಬೆಂದ ಕೂಡಲೇ ರುಬ್ಬಿದ ಮಿಶ್ರಣವನ್ನು ಹಾಕಿ, ಅದಕ್ಕೆ ಉಪ್ಪು ಮತ್ತು ನೀರು ಹಾಕಿ ಕುದಿಸಿದರೆ, ಮೆಣಸ್ಕಾಯಿ ತಯಾರಾಗಿದೆ
