Mangalore buns is a famous breakfast/ snack recipe of south canara region (Udupi- Mangalore). Traditionally it is made of banana and refined flour with little sugar. But in our today’s recipe we have replaced refined flour(maida) with wheat flour. This change make this buns bit healthier. It doesn’t change the taste, but definitely mild difference is texture is noticed.

Mouth-watering taste of buns with mild sweetness can be enhanced with a cup of chai(Indian Tea). It is also served with sambar or coconut chutney. But my choice is to dip the bun in chai and have it, it gives you a heavenly feel. Do try it.


Sugar added in this recipe is completely optional, if you don’t like sugar, it can be skipped. But in that case, make sure that bananas are in sweeter side. Otherwise you may not like it. If Maida  is used in recipe, make sure jeera or ajwain is used.

Ingredients required :

  • Ripped banana - 4 
  • Wheat flour - 1.25 cup
  • Curd - 1/4 cup
  • Sugar powder - 1/4 cup
  • Salt - 1/4 tsp
  • Baking soda - 1/4 tsp
  • Oil - 2 tsp
  • Oil for frying - As per the requirement

Method of Preparation :

  • Initially take a bowl, add bananas to it and mash it.
  • Now add  curd, sugar, baking soda and salt. mix them well.
  • Now add Wheat flour little by little and mix well.  
  • Now your dough is ready. It should be little softer than chapati dough and it should be little  sticky too.
  • Rest the dough for 6 to 7 hours.
  • After 7 hours add oil to it and mix well.
  • Then make a small size ball from dough
  • Dip it in flour and roll it to poori size, but it should be little thicker than poori.
  • Meanwhile keep oil for deep frying. Once oil is heated . add this rolled dough and fry both the side.
  • Now your buns is ready to serve. 

Note:

  • Actually traditional recipe of buns is prepared using maida, here we use wheat flour. You can even use maida.
  • There is no much difference in taste if you use wheatflour. Maida is not so good for health so we used wheat flour.
  • If you use wheat flour taste won't change, only the layer inside the buns will reduce.

ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು :

  • ಸಿಪ್ಪೆ ತೆಗೆದ ಬಾಳೆಹಣ್ಣು - ೪ (ಸಣ್ಣ ಬಾಳೆಹಣ್ಣು )
  • ಗೋಧಿಹಿಟ್ಟು - ೧.೨೫ ಕಪ್ 
  • ಸಕ್ಕರೆ - ೧/೪ ಕಪ್ 
  • ಮೊಸರು - ೧/೪ ಕಪ್ 
  • ಉಪ್ಪು - ೧/೪ ಟೀ ಚಮಚ 
  • ಬೇಕಿಂಗ್ ಸೋಡಾ - ೧/೪ ಟೀ ಚಮಚ 
  • ಎಣ್ಣೆ - ೨ ಟೀ ಚಮಚ 
  • ಕರಿಯಲು ಎಣ್ಣೆ - ಬೇಕಾದಷ್ಟು 

ಮಾಡುವ ವಿಧಾನ :

  • ಮೊದಲಿಗೆ ಒಂದು ಪಾತ್ರೆ ತೆಗೆದುಕೊಂಡು ಅದಕ್ಕೆ ಬಾಳೆಹಣ್ಣು ಹಾಕಿ ಪುಡಿ ಮಾಡಿಕೊಳ್ಳಿ. 
  • ಅದಕ್ಕೆ ಮೊಸರು, ಉಪ್ಪು, ಸಕ್ಕರೆ ಪುಡಿ ಮತ್ತು ಬೇಕಿಂಗ್ ಸೋಡಾ ಹಾಕಿ ಚೆನ್ನಾಗಿ ಮಿಕ್ಸ್  ಮಾಡಿಕೊಳ್ಳಬೇಕು. 
  • ಹಿಟ್ಟು ಚಪಾತಿ ಹದಕ್ಕಿಂತ ಸ್ವಲ್ಪ ಸಾಫ್ಟ್ ಆಗಿ ಇರಬೇಕು. ಮತ್ತು ಹಿಟ್ಟು ಸ್ವಲ್ಪ ಅಂಟು ಅಂಟು ಇರಬೇಕು. 
  • ಈಗ ಹಿಟ್ಟನ್ನು ೬ ರಿಂದ ೭ ಗಂಟೆಗಳ ಕಾಲ ಮುಚ್ಚಿ ಇಡಬೇಕು. 
  • ೭ ಗಂಟೆಗಳ ನಂತರ ಅದಾಕೆ ಸ್ವಲ್ಪ ಎಣ್ಣೆ ಹಾಕಿ ಚೆನ್ನಾಗಿ ಮಿಕ್ಸ್ ಮಾಡಬೇಕು ಅಥವಾ ನಾದಬೇಕು. 
  • ನಂತರ ಅದನ್ನು ಸಣ್ಣ ಚೆಂಡಿನ ಆಕಾರ ಮಾಡಿ ಹಿಟ್ಟಿನಲ್ಲಿ ಮುಳುಗಿಸಿ ವೃತಾಕಾರದಲ್ಲಿ ಲಟ್ಟಿಸಬೇಕು. 
  • ಅದು ಪೂರಿ ಗಾತ್ರ ಇದ್ದರೆ ಸಾಕು. ದಪ್ಪ ಮಾತ್ರ ಪೂರಿ ಗಿಂತ ಸ್ವಲ ಜಾಸ್ತಿ ಇರಬೇಕು. 
  • ಒಟ್ಟಿಗೆ ಒಂದು ಬಾಣಲೆಯಲ್ಲಿ ಕರಿಯಲು ಎಣ್ಣೆ ಇಡಬೇಕು. 
  • ಎಣ್ಣೆ ಕಾದ ನಂತರ ಅದಕ್ಕೆ ಲಟ್ಟಿಸಿದ ಹಿಟ್ಟನ್ನು ಹಾಕಿ ೨ ಬದಿ ಕಾಯಿಸಿದರೆ ಬನ್ಸ್ ತಯಾರಾಗಿದೆ. 

ಸೂಚನೆ :

  • ಸಾಮಾನ್ಯವಾಗಿ ಬನ್ಸ್ ತಯಾರಿಸಲು ಮೈದಾಹಿಟ್ಟು ಉಪಯೋಗಿಸುತ್ತಾರೆ , ಇಲ್ಲಿ ನಾವು ಗೋಧಿ ಹಿಟ್ಟು ಉಪಯೋಗಿಸಿದ್ದೇವೆ. 
  • ಮೈದಾ ಆರೋಗ್ಯಕ್ಕೆ ಒಳ್ಳೆಯದಲ್ಲ , ಅದೇ ಕಾರಣಕ್ಕೆ ಗೋಧಿ ಉಪಯೋಗಿಸಿದ್ದೇವೆ. ನಿಮಗೆ ಬೇಕಾದರೆ ಮೈದಾ ಉಪಯೋಗಿಸಬಹುದು. 
  • ಗೋಧಿ ಉಪಯೋಗಿಸಿದರೆ ರುಚಿಯಲ್ಲಿ  ಏನೂ ವ್ಯತ್ಯಾಸ ಇರುವುದಿಲ್ಲ. 
  • ಆದರೆ ಮೈದಾ ಉಪಯೋಗ ಮಾಡಿದರೆ ಕಾಯಿಸಿದನಂತರ ಬನ್ಸ್ ಒಳಗಿಂದ ತುಂಬಾ ಲೇಯರ್ ಇರುತ್ತದೆ, ಗೋಧಿ ಉಪಯೋಗಿಸಿದರೆ ಅದು ಸ್ವಲ್ಪ ಕಡಿಮೆ ಇರುತ್ತದೆ.
