Methi Tambli । Menthe Tambli । ಮೆಂತೆ ತಂಬುಳಿ 



Methi tambli is mostly prepared in south canara region like mangalore, Kasaragod and Udupi. It is also prepared in malnad region. Tambli is served as first item in thali. Reason behind this is, it improves the digestive system and provided good appetite for rest of the thali.  Variety of tambli’s are prepared. Menthe Tambli is one of the famous and favourite recipe. Tambli’s cool your body, so it mostly prepared in summers with different ingredients. Variation of this tambli can be done by replacing green chilli with red chillies. 

Ingredients Required :

  • Methi seeds / Fenugreek Seeds - 1/2 tsp
  • Coconut oil - 1/2 tsp
  • Grated coconut - 2 tsp
  • Salt - As per the taste 
  • Curd - 1 cup
  • Green chili - 1 to 2

For tempering :

  • Coconut oil - 1 tsp
  • Mustard seeds - 1/2 tsp
  • Red chili - 1
  • Curry leaves - 1 tsp

Method of Preparation : 

  • Take a pan, add oil to it, once oil is heated add methi seeds and fry it until it turns to brown color or 30 seconds.
  • Then take a mixer jar, add fried methi seeds,  grated coconut, green chili and grind it to a fine paste.
  • Next, add curd and salt to the same paste and grind them well. 
  • Now methi tambli is ready. 
  • For tempering take a pan, add oil to it, once oil is heated add mustard seeds, green chili, curry leaves and fry it for 30 seconds.
  • Now add tempering to tambli, you methi tambli or menthe tambli is ready to serve. 


ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು : 

  • ಮೆಂತೆ ಕಾಳು - ೧/೨ ಟೀ ಚಮಚ 
  • ತೆಂಗಿನ ಎಣ್ಣೆ - ೧/೨ ಟೀ ಚಮಚ 
  • ತೆಂಗಿನಕಾಯಿ ತುರಿ - ೨ ಟೀ ಚಮಚ 
  • ಉಪ್ಪು - ರುಚಿಗೆ ತಕ್ಕಷ್ಟು 
  • ಮೊಸರು - ೧ ಕಪ್ 
  • ಹಸಿಮೆಣಸಿನ ಕಾಯಿ - ೧ ರಿಂದ ೨

ಒಗ್ಗರಣೆಗೆ :

  • ತೆಂಗಿನ ಎಣ್ಣೆ - ೧ ಟೀ ಚಮಚ 
  • ಸಾಸಿವೆ - ೧/೨ ಟೀ ಚಮಚ 
  • ಕೆಂಪು ಮೆಣಸು - ೧
  • ಕರಿಬೇವಿನ ಸೊಪ್ಪು - ೧ ಟೀ ಚಮಚ 

ಮಾಡುವ ವಿಧಾನ :

  • ಮೊದಲಿಗೆ ಒಂದು ಪಾನ್ ತೆಗೆದುಕೊಂಡು , ಅದಕ್ಕೆ ಎಣ್ಣೆ ಹಾಕಿ , ಎಣ್ಣೆ ಬಿಸಿ ಆದನಂತರ ಅದಕ್ಕೆ ಮೆಂತೆ ಕಾಳು ಹಾಕಿ ೩೦ ಸೆಕೆಂಡುಗಳ ಕಾಲ ಹುರಿಯಬೇಕು. 
  • ನಂತರ ಒಂದು ಮಿಕ್ಸಿ ಜಾರ್ ತೆಗೆದುಕೊಂಡು ಅದಕ್ಕೆ, ಹುರಿದ ಮೆಂತೆ ಕಾಲು, ತೆಂಗಿನಕಾಯಿ ತುರಿ, ಹಸಿಮೆಣಸು ಹಾಕಿ ಚೆನ್ನಾಗಿ ರುಬ್ಬಿಕೊಳ್ಳಬೇಕು. ರುಬಿಕೊಂಡ ಮಿಶ್ರಣಕ್ಕೆ, ಮೊಸರು ಮತ್ತು ಉಪ್ಪು ಹಾಕಿ ಮತ್ತೊಮ್ಮೆ ರುಬಿಕೊಳ್ಳಬೇಕು. ಈಗ ನಿಮ್ಮ ಮೆಂತೆ ತಂಬುಳಿ ತಯಾರಾಗಿದೆ. 
  • ಒಗ್ಗರಣೆಗೆ ಒಂದು ಪಾನ್ ಇತ್ತು ಅದಕ್ಕೆ , ಎಣ್ಣೆ ಹಾಕಬೇಕು. ಎಣ್ಣೆ ಬಿಸಿ ಆದ ನಂತರ ಅದಕ್ಕೆ ಸಾಸಿವೆ, ಕೆಂಪುಮೆಣಸು ಮತ್ತು ಕರಿಬೇವಿನ ಎಲೆ ಹಾಕಿ ೩೦ ಸೆಕೆಂಡುಗಳ ಕಾಲ ಫ್ರೈ ಮಾಡಬೇಕು. 
  • ನಂತರ ಒಗ್ಗರಣೆಯನ್ನು ತಂಬುಳಿಗೆ ಹಾಕಿ ಮಿಕ್ಸ್ ಮಾಡಿದರೆ, ಮೆಂತೆ ತಂಬುಳಿ ತಯಾರಾಗಿದೆ.

Kokum Rasam

Kokum Rasam Ingredients Required Kokum - 2 to 3 Jaggery - 2 tbsp Salt - as per the taste Mustard seeds - 1/2 tsp whole red chillies - 3 to 4 oil - 1 tsp Water - 2 cups Curry Leaves - 4 to 5 Leaves Method of Preparation Soak kokum for 30 minutes as pre preparation. Take a pan, add oil and once oil is heated add mustard seeds and garlic. Wait until garlic changes its color to light brown and mustard splutters. Now add redchillies and curry leaves fry for 30 seconds. Now add kokum soaked water, add jaggery, salt and water then get them to boil. Once its boiled allow them to boil further till 7 to 8 min. Now Kokum rasam is ready. Note : Kokum rasam cane be served with hot rice or can also be drunk as a health drink.
