Mavinkayi chutney or Raw mango chutney is a traditional dish. we can do this in mango season. The recipe here is our mother's recipe and it is very simple one. You can add onion, coriander leaves if required. In our household traditionaly this recipe is prepared without onion. If you add onion, strong taste and pungency of onion dominates the actual flavour and divine smell of raw mango.  Its very good to have with dosa and rice. Try it out and share your opinion with us.

Ingredients Required : 

  • Raw Mango Slice - 1 cup 
  • Grated Coconut - 1 cup
  • Salt - As per the taste 
  • Green Chilli - 2
  • Water - 1/2 cup or as per the requirement

For tempering :

  • Coconut oil - 1 tsp
  • Mustard seeds - 1/2 tsp
  • Curry leaves - 1 tsp
  • Red chili - 1

Method of Preparation :

  • Initially take a mixi jar, add mango slice, grated coconut, salt and green chilli.
  • Now grind them to fine paste using water. you chutney is ready.  
  • For tempering take a pan add oil to it. Once oil is heated add mustard seeds, red chili and curry leaves. fry it for 30 seconds.
  • Add the tempering to chutney and mix well. Now your mango chutney is ready to serve. 

ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು :

  • ಮಾವಿನಕಾಯಿ - ೧ ಕಪ್ 
  • ತೆಂಗಿನಕಾಯಿ ತುರಿ - ೧ ಕಪ್ 
  • ಹಸಿಮೆಣಸಿನ ಕಾಯಿ - ೨
  • ಉಪ್ಪು - ರುಚಿಗೆ ತಕ್ಕಷ್ಟು 
  • ನೀರು - ೧/೨ ಕಪ್ ಅಥವಾ ಬೇಕಾದಷ್ಟು 

ಒಗ್ಗರಣೆಗೆ :

  • ತೆಂಗಿನ ಎಣ್ಣೆ - ೧ ಟೀ ಚಮಚ 
  • ಸಾಸಿವೆ - ೧/೨ ಟೀ ಚಮಚ 
  • ಕೆಂಪು ಮೆಣಸು - ೧
  • ಕರಿಬೇವಿನ ಎಲೆ - ೧ ಟೀ ಚಮಚ 

ಮಾಡುವ ವಿಧಾನ :

  • ಮೊದಲಿಗೆ ಒಂದು ಮಿಕ್ಸಿ ಜಾರ್ ತೆಗೆದುಕೊಂಡು ಅದಕ್ಕೆ ಮಾವಿನಕಾಯಿ, ತೆಂಗಿನಕಾಯಿ ತುರಿ. ಉಪ್ಪು ಮತ್ತು ಹಸಿಮೆಣಸು ಹಾಕಿ ನುಣ್ಣಗೆ ರುಬ್ಬಿಕೊಳ್ಳಬೇಕು. 
  • ಮಿಶ್ರಣ ಚಟ್ನಿ ಹದ ಬರಲು ಬೇಕಾದಷ್ಟು ನೀರು ಹಾಕಿ ರುಬ್ಬಿಕೊಳ್ಳಬೇಕು. ಈಗ ಚಟ್ನಿ ತಯಾರಾಗಿದೆ.  
  • ಈಗ ಒಗ್ಗರಣೆಗೆ ಒಂದು ಪಾನ್ ಇಟ್ಟು ಅದಕ್ಕೆ ಎಣ್ಣೆ ಹಾಕಿ, ಎಣ್ಣೆ ಕಾದ ನಂತರ ಅದಕ್ಕೆ ಸಾಸಿವೆ, ಕೆಂಪುಮೆಣಸು, ಕರಿಬೇವಿನ ಎಲೆ ಹಾಕಿ ೩೦ ಸೆಕೆಂಡುಗಳ ಫ್ರೈ ಮಾಡಬೇಕು. 
  • ಈಗ ಒಗ್ಗರಣೆಯನ್ನು ಚಟ್ನಿ ಗೆ ಹಾಕಿದರೆ ಮಾವಿನಕಾಯಿ ಚಟ್ನಿ ತಯಾರಾಗಿದೆ.

Kokum Rasam

Kokum Rasam Ingredients Required Kokum - 2 to 3 Jaggery - 2 tbsp Salt - as per the taste Mustard seeds - 1/2 tsp whole red chillies - 3 to 4 oil - 1 tsp Water - 2 cups Curry Leaves - 4 to 5 Leaves Method of Preparation Soak kokum for 30 minutes as pre preparation. Take a pan, add oil and once oil is heated add mustard seeds and garlic. Wait until garlic changes its color to light brown and mustard splutters. Now add redchillies and curry leaves fry for 30 seconds. Now add kokum soaked water, add jaggery, salt and water then get them to boil. Once its boiled allow them to boil further till 7 to 8 min. Now Kokum rasam is ready. Note : Kokum rasam cane be served with hot rice or can also be drunk as a health drink.
