Rice Dumpling ।Pundi । ಪುಂಡಿ | Kadubu




Pundi is a famous south canara breakfast recipe. In Mangalore and udupi regions if you see  at least once in two week they will serve this as  breakfast. It is also called as "Pundi Gatti". 

Traditionally its made with rice, but due to fast life, these days its prepared using Rice rava. It is very easy to prepare and it is very tasty too. If you eat this recipe with coconut chutney or sambar it will be very tasty.

Ingredients Required :

  • Rice rava - 2 cup
  • Water - As per the requirement or 40 to 5 cup
  • Salt - As per the taste 
  • Sugar - 2 tsp
  • Coconut Oil - 2 tsp
  • Mustard seeds - 1 tsp
  • Curry leaves - 1 tsp
  • Red chili - 2
  • Green chili - 2
  • Grated Coconut - 3/4 cup or 1 cup

Method of Preparation :

  • Take rice rava, pore water, so that whole rice rava is covered and rest it for 1 hour.
  • After one hour remove excess water and pore fresh water to it, such that water should  2 inch above rice rava
  • Now take pan add oil to it, once oil is heated add mustard seeds, curry leaves, red chilies and green chilies.
  • Fry it for a minute, then add rice rava with water, salt ,sugar and mix it well so there are no lumps  formed.
  • After 30 seconds add grated coconut and mix it.
  • Now keep on mixing it until it comes together to a form of dough.
  • Now allow it to cool little bit. once heat comes down make a balls using your hands.
  • Meanwhile Prepare a steamer and steam it. You can also use idle steamer.
  • Now place rice balls in that and steam it around 20 minutes. 
  • Traditional South canara Pundi is ready.

ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು :

  • ಅಕ್ಕಿ ತರಿ - ೨ ಕಪ್ 
  • ನೀರು - ಬೇಕಾದಷ್ಟು 
  • ಉಪ್ಪು - ರುಚಿಗೆ ತಕ್ಕಸ್ಟು 
  • ಎಣ್ಣೆ - ೨ ಟೀ ಚಮಚ 
  • ಸಾಸಿವೆ - ೧ ಟೀ ಚಮಚ 
  • ಕರಿಬೇವು ಎಸಳು - ೧ ಟೀ ಚಮಚ  
  • ಹಸಿಮೆಣಸು - ೨
  • ಕೆಂಪು ಮೆಣಸು - ೨
  • ಸಕ್ಕರೆ - ೨ ಟೀ ಚಮಚ 
  • ತುರಿದ ತೆಂಗಿನಕಾಯಿ - ೩/೪ ಕಪ್ ಅಥವಾ ೧ ಕಪ್ 

ಮಾಡುವ ವಿಧಾನ :

  • ಮೊದಲಿಗೆ ಒಂದು ಪಾತ್ರದಲ್ಲಿ ಅಕ್ಕಿ ತರಿ ತೆಗೆದುಕೊಂಡು ಅದಕ್ಕೆ ಅಕ್ಕಿ ತರಿ ಮುಳುಗುವಷ್ಟು ನೀರು ಹಾಕಿ ೧ ಗಂಟೆಗಳ ಕಾಲ ನೆನೆಯಲು ಬಿಡಬೇಕು. 
  • ಒಂದು ಗಂಟೆಯ ನಂತರ ಅದನ್ನು ತೊಳೆದು ಹೊಸ ನೀರು ಹಾಕಬೇಕು. ನೀರು ರವಕ್ಕಿಂತ ೨ ಇಂಚ್  ಜಾಸ್ತಿ ಇರಬೇಕು. 
  • ಈಗ ಒಂದು ಬಾಣಲೆ ತೆಗೆದುಕೊಂಡು ಅದಕ್ಕೆ ಎಣ್ಣೆ ಹಾಕಬೇಕು. ಎಣ್ಣೆ ಬಿಸಿ ಆದ  ನಂತರ ಅದಕ್ಕೆ ಸಾಸಿವೆ, ಕರಿಬೇವು ಎಸಳು, ಕೆಂಪುಮೆಣಸಿನಕಾಯಿ, ಹಸಿ ಮೆಣಸು ಹಾಕಿ ಒಂದು ನಿಮಿಷಗಳ ಕಾಲ ಹುರಿಯಬೇಕು. 
  • ಈಗ ಅದಕ್ಕೆ ನೀರಿನೊಟ್ಟಿಗೆ ಇರುವ ಅಕ್ಕಿ ತರಿಯನ್ನು ಹಾಕಬೇಕು, ಜೊತೆಗೆ ಉಪ್ಪು ಮತ್ತು ಸಕ್ಕರೆ ಹಾಕಿ ಗಂಟಿಲ್ಲದಂತೆ ಕಲಸಬೇಕು. 
  • ೩೦ ಸೆಕೆಂಡುಗಳ ನಂತರ ತೇಜಿನಕಾಯಿ ತುರಿ ಹಾಕಿ ಚೆನ್ನಾಗಿ ಮಿಕ್ಸ್ ಮಾಡಿಕೊಳ್ಳಿ.
  • ನಂತರ ಎಲ್ಲಾ ಹಿಟ್ಟು ಒಟ್ಟಿಗೆ ಬಂದಾಗ ಗ್ಯಾಸ್ ಆಫ್ ಮಾಡಬೇಕು. ಮತ್ತು ಹಿಟ್ಟನ್ನು ಬಿಸಿ ಆರಲು ಬಿಡಬೇಕು. 
  • ಸ್ವಲ್ಪ ಬಿಸಿ ಆರಿದಮೇಲೆ , ನಿಮಗೆ ಕೈಯಲ್ಲಿ ಒಂಡೆ ಮಾಡಲಿಕ್ಕೆ  ಆಗುವಷ್ಟು ಬಿಸಿ ಹೋದರೆ ಅದನ್ನು ಚೆಂಡಿನಾಕಾರದಲ್ಲಿ ಒಂಡೆ ಮಾಡಿ ಇಟ್ಟುಕೊಳ್ಳಬೇಕು. 
  • ಒಟ್ಟಿಗೆ ಇನ್ನೊಂದು ಗ್ಯಾಸ್ ಅಲ್ಲಿ ಹಬೆ ಬೇಯಿಸುವ ಪಾತ್ರೆ ಇಡಬೇಕು, ಅಥವ ಇಡ್ಲಿ ಬೇಯಿಸುವ ಪಾತ್ರವು ಉಪಯೋಗಿಸಬಹುದು
  • ಅದು ಬಿಸಿ ಆದ ನಂತರಒಂಡೆ  ಮಾಡಿದ ಹಿಟ್ಟನ್ನು ಹಬೆಯಲ್ಲಿ ಇತ್ತು ೨೦ ನಿಮಿಷಗಳ ಕಾಲ ಬೇಯಿಸಿದರೆ. ಅಕ್ಕಿ ತರಿ ಪುಂಡಿ ತಯಾರಾಗಿದೆ.
