Garlic Chutney । ಬೆಳ್ಳುಳ್ಳಿ ಚಟ್ನಿ 


Garlic chutney , it is very traditional dish. Its simple mixture of garlic, chillies and tamarind. If you dislike the taste of tamarind you can skip it. Even without tamarind this chutney absolutely tastes good. Serve this chutney with curd rice or Dakshin kannada style gangi. This can be served with rice, dosa. If you are a fan of Ganji then this would be the best mate for it.

Initially this dish was done by our grandmother, then our mother use to do it. Now we are doing this. You all know that garlic is very good for health and also it cures a lot of health issues. If you are a garlic hater due to its smell, then this is the best recipe to try. Give it a try.

Ingredients Required :

  • Garlic - 30 to 35 cloves (2 pods)
  • Oil - 3 tsp
  • Red chili - 3 to 4
  • Tamarind - Peanut sized
  • Salt - As per the taste (3/4 tsp) 
  • Water - 2 tbsp
  • Mustard seeds - 1/2 tsp
  • Curry leaves - 1 tsp

Method of Preparation :

  • Initially take a pan add oil to it, once oil is heated add garlic cloves to it. 
  • fry it for a minute. Now add red chili and fry it for 30 seconds.
  • Next add tamarind and fry for 30 seconds. After 30 seconds off the gas and leave it for cool down.
  • Once it is cooled grind all the ingredients with very less water. 
  • Grind it to a fine paste with salt, so your chutney is ready.
  • For tampering take another pan add 1 tsp of oil, once oil is heated add mustard seeds and curry leaves. Fry till mustard seeds sputter. Put that tempering to chutney.
  • Now your traditional garlic chutney is ready to serve. 

ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು :

  • ಬೆಳ್ಳುಳ್ಳಿ - ೩೦ ರಿಂದ ೩೫ ಎಸಳು 
  • ಎಣ್ಣೆ - ೩ ಟೀ ಚಮಚ 
  • ಬ್ಯಾಡಗಿ ಕೆಂಪು ಮೆಣಸು - ೩ ರಿಂದ ೪
  • ಹುಳಿ - ಕಡ್ಲೆಬೀಜ ಗಾತ್ರ 
  • ಉಪ್ಪು - ರುಚಿಗೆ ತಕ್ಕಷ್ಟು 
  • ಸಾಸಿವೆ - ೧/೨ ಟೀ ಚಮಚ 
  • ಕರಿಬೇವಿನ ಎಸಳು -  ೧ ಟೀ ಚಮಚ 
  • ನೀರು - ೨ ಟೇಬಲ್ ಚಮಚ 

ಮಾಡುವ ವಿಧಾನ :

  • ಮೊದಲಿಗೆ ಒಂದು ಬಾಣಲೆ ತೆಗೆದುಕೊಂಡು ಅದಕ್ಕೆ ಸ್ವಲ್ಪ ಎಣ್ಣೆ ಹಾಕಬೇಕು. ಎಣ್ಣೆ ಬಿಸಿ ಆದ ನಂತರ ಅದಕ್ಕೆ ಬೆಳ್ಳುಳ್ಳಿ ಎಸಳು ಹಾಕಿ ೧ ನಿಮಿಷಗಳ ಕಾಲ ಹುರಿಯಬೇಕು. 
  • ಈಗ ಅದಕ್ಕೆ ಬ್ಯಾಡಗಿ ಮೆಣಸು ಹಾಕಿ ೩೦ ಸೆಕೆಂಡುಗಳ ಕಾಲ ಹುರಿಯಬೇಕು. ನಂತರ ಅದಕ್ಕೆ ಹುಳಿ ಹಾಕಿ ಮತ್ತೆ ೩೦ ಸೆಕೆಂಡುಗಳ ಕಾಲ ಹುರಿದು ಗ್ಯಾಸ್ ಆಫ್ ಮಾಡಿ ತಣಿಯಲು ಬಿಡಬೇಕು. 
  • ತಣಿದ ನಂತರ ಅದನ್ನು ಒಂದು ಮಿಕ್ಸಿ ಜಾರಿಗೆ ಹಾಕಿ , ಸ್ವಲ್ಪವೇ ಸ್ವಲ್ಪ ನೀರಿನ ಜೊತೆಗೆ ಮತ್ತು ಉಪ್ಪು ಹಾಕಿ ನುಣ್ಣಗೆ ರುಬ್ಬಿಕೊಳ್ಳಬೇಕು. ಈಗ ನಿಮ್ಮ ಚಟ್ನಿ ತಯಾರಾಗಿದೆ. 
  • ಒಗ್ಗರಣೆಗೆ ಒಂದು ಪಾನ್ ತೆಗೆದುಕೊಂಡು ಅದಕ್ಕೆ ೧ ಟೀ ಚಮಚ ಎಣ್ಣೆ ಹಾಕಿ, ಎಣ್ಣೆ ಬಿಸಿ ಆದ ನಂತರ  ಸಾಸಿವೆ ಮತ್ತು ಕರಿಬೇವಿನ ಸೊಪ್ಪುಹಾಕಬೇಕು.  ಸಾಸಿವೆ ಚಿಟಪಟ ಹೇಳುವತನಕ ಹುರಿದು ಅದನ್ನು ಚಟ್ನಿಗೆ ಹಾಕಿ ಮಿಕ್ಸ್ ಮಾಡಿದರೆ ಬೆಳ್ಳುಳ್ಳಿ ಚಟ್ನಿ ತಯಾರಾಗಿದೆ.

Boil till the jaggery dissolves.  Once jaggery is dissolved, add ghee, yelachi and grated coconut. Mix them well. Now add avalakki/ poha and mix them well.
