Orange Peel Chutney / ಕಿತ್ತಳೆ ಸಿಪ್ಪೆ ಚಟ್ನಿ 


Ingredients Required

  • Orange peel - peel of half big orange ( or as much as required)
  • Red chillies (Byadagi) - 7 to 8
  • Tamarind - small lemon sized
  • Jaggery - 2 tbsp
  • oil - 3 to 4 tsp
  • Coconut - 2 tbsp
  • Curry Leaves - 1 tsp
  • Mustard seeds - 1 tsp
  • Salt - As per the taste
  • Water - As much as required

Method of Preparation

  • Soak the tamarind for 10 to 15 minutes in water. 
  • Take a pan add 1 to 2 tsp of oil , once oil is heated add 5 to 6 redchillies and fry them for a minute.
  • Now take a mixer jar add these fried redchillies, orange peel ( break them to smaller pieces), soaked tamarind, coconut and salt.
  • Grind them to a coarse paste. Once its grinded to coarse paste add jaggery and water as much as required to the mixer jar.
  • Again grind them all together to a fine paste.
  • Now use the same pan which was used earlier for frying and add 2 tsp of oil to it.
  • Once oil is heated add mustard seeds, 2 broken redchillies and curry leaves, Fry them until mustard seeds splutters.
  • Now add grinded chutney to the tadka and add water as well as salt, based on the requirement. Get them to a boil.
  • Once the chutney is boiled, its ready to serve.
  • Serve this chutney with hot rice.
Note: This chutney can be stored in Refrigerator for 10 days.

ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು 

  • ಕಿತ್ತಳೆ  ಹಣ್ಣಿನ ಸಿಪ್ಪೆ  - ೧/೨  ಕಿತ್ತಳೆ  ಹಣ್ಣಿನದ್ದು 
  • ಕೆಂಪು ಮೆಣಸು (ಬ್ಯಾಡಗಿ ) - ೭ ರಿಂದ ೮
  • ಹುಣುಸೆ ಹುಳಿ - ಒಂದು ಸಣ್ಣ ನಿಂಬೆ ಹಣ್ಣಿನ ಗಾತ್ರದ್ದು 
  • ಬೆಲ್ಲ - ೨ ಟೇಬಲ್ ಚಮಚ 
  • ಎಣ್ಣೆ - ೩ ರಿಂದ ೪ ಟೀ ಚಮಚ 
  • ತೆಂಗಿನ ತುರಿ  - ೨ ಟೇಬಲ್ ಚಮಚ 
  • ಕರಿಬೇವು - ೧ ಟೀ ಚಮಚ 
  • ಸಾಸಿವೆ - ೧ ಟೀ ಚಮಚ 
  • ಉಪ್ಪು - ರುಚಿಗೆ ತಕ್ಕಷ್ಟು 
  • ನೀರು - ಬೇಕಾದಷ್ಟು 

ತಯಾರಿಸುವ ವಿಧಾನ 

  • ಮೊದಲಿಗೆ ಹುಣುಸೆ ಹುಳಿಯನ್ನು ೧೦ ರಿಂದ ೧೫ ನಿಮಿಷಗಳ ಕಾಲ ನೀರಲ್ಲಿ ನೆನೆಸಿಡಬೇಕು. 
  • ಒಂದು ಬಾಣಾಲೆಗೆ ಸ್ವಲ್ಪ ಎಣ್ಣೆ ಹಾಕಿ ಅದಕ್ಕೆ ೫ ರಿಂದ ೬ ಮೆಣಸು ಹಾಕಿ ೧ ನಿಮಿಷಗಳ ಕಾಲ ಹುರಿಯಬೇಕು.
  • ಒಂದು ಮಿಕ್ಸರ್ ಜಾರ್ ಗೆ ಹುರಿದ ಮೆಣಸು,  ಕಿತ್ತಳೆ  ಹಣ್ಣಿನ ಸಿಪ್ಪೆ (ಮುರಿದು ಹಾಕಬೇಕು ), ನೆನೆಸಿದ ಹುಣುಸೆ ಹುಳಿ, ತೆಂಗಿನ ತುರಿ ಮತ್ತು ಉಪ್ಪು ಹಾಕಿ ತರಿ ತರಿಯಾಗಿ ನೀರು ಹಾಕದೆ ರುಬ್ಬಬೇಕು. 
  • ತರಿ ತರಿಯಾಗಿ ರುಬ್ಬಿದ ಮಿಶ್ರಣಕ್ಕೆ ಬೆಲ್ಲ ಮತ್ತು ಬೇಕಾದಷ್ಟು ನೀರು ಹಾಕಿ ನುಣ್ಣಗೆ ರುಬ್ಬಿಕೊಳ್ಳಬೇಕು..
  • ಈಗ ಮೊದಲು ಉಪಯೋಗಿಸಿದ ಬಾಣಾಲೆಗೆ ಸ್ವಲ್ಪ ಎಣ್ಣೆ ಹಾಕಿ ಅದು ಬಿಸಿ ಆದ ನಂತರ ಅದಕ್ಕೆ ಸಾಸಿವೆ, ಮೆಣಸು, ಕರಿಬೇವು ಹಾಕಿ ಹುರಿಯಬೇಕು. 
  • ಸಾಸಿವೆ ಸಿಡಿದಾಗ ಅದಕ್ಕೆ ರುಬ್ಬಿದ ಮಿಶ್ರಣ, ಬೇಕಾದಷ್ಟು ನೀರು ಮತ್ತು ಉಪ್ಪು ಹಾಕಿ ಚೆನ್ನಾಗಿ ಕುದಿಸಬೇಕು. 
  • ಈಗ ಆರೋಗ್ಯಕರವಾದ ಕಿತ್ತಳೆ  ಹಣ್ಣಿನ ಸಿಪ್ಪೆ ಚಟ್ನಿ ತಯಾರಾಗಿದೆ. 
  • ಇದನ್ನು ಊಟದ ಜೊತೆ ತಿಂದರೆ ತುಂಬಾ ಚೆನ್ನಾಗಿ ಇರುತ್ತದೆ
