As you all know jalebi is a famous sweet recipe of India. This is  a very old recipe ,almost all will love this recipe. This Recipe is specially prepared in auspicious ocasions like Wedding, Puja's, Diwali or any other indian festivals. Due to the fermantation process the original recipe was not much tried at home. But these days instant is the one key point of cooking, so these recipes were done instantly by using baking soda or baking powder. Its very easy to prepare.  No mixi, no oven nothing is required, try it. 

History of jalebi says that its not originated in India. But indians made it their by trying it in their own way. This recipe can also be prepared by bachelor's or even beginners. Authentically they say that jalebi's shape is never defined. But these days due to the appearance matter its tried to be in circle shape. But we always belive that shape and look doen't matter much, rather taste matters the most. 

Ingredients Required : 

  • All purpose flour ( Maida ) - 1 cup
  • Rava - 2 tsp
  • Food color or turmeric powder - 1 pinch 
  • Curd - 1/4 cup
  • Water - As per the requirement + 1 cup for sugar syrup 
  • Baking soda - 1/4 tsp
  • Sugar - 1 cup
  • Oil - for deep frying 

Method of Preparation :

  • Initially take a a bowl add Maida, rava, food color or turmeric powder, baking soda and curd, mix it well. 
  • The batter consistency should be like idli batter. 
  • Allow it to rest for 10 minutes.
  • Meanwhile take a pan add sugar and 1 cup of water, allow them to boil. Once sugar is dissolved boil it to 3 minutes or until it gets stickiness.
  • Sugar syrup should not be very thick.
  • Now keep oil in pan for deep frying. 
  • Now 10 minutes resting is done for batter and take piping bag or squeeze sauce bottle or milk cover, cut it and pore the batter to it, and make a small hole at another side .
  • Check for the right consistency of oil , if oil is heated, drop the batter in oil , in the shape of jalebi.
  • Now fry it both the side. Once it is fried shift it to sugar syrup.
  • Soak both the sides in sugar syrup for 10 Seconds. 
  • After 10 seconds remove from it. Now your tasty jalebi is ready.

ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು :

  • ಮೈದಾ ಹುಡಿ - ೧ ಕಪ್ 
  • ರವ - ೨ ಟೀ ಚಮಚ 
  • ಫುಡ್ ಕಲರ್ / ಅರಶಿನ - ೧ ಪಿಂಚ್ ಅಥವಾ ೧/೮ ಟೀ ಚಮಚ 
  • ಮೊಸರು - ೧/೪ ಕಪ್ 
  • ಬೇಕಿಂಗ್ ಸೋಡಾ - ೧/೪ ಟೀ ಚಮಚ 
  • ನೀರು - ಬೇಕಾದಷ್ಟು + ಸಕ್ಕರೆ ಪಾಕಕ್ಕೆ ೧ ಕಪ್ 
  • ಸಕ್ಕರೆ - ೧ ಕಪ್ 
  • ಎಣ್ಣೆ - ಕರಿಯಲು 

ಮಾಡುವ ವಿಧಾನ :

  • ಮೊದಲಿಗೆ ಒಂದು ಪಾತ್ರೆ ತೆಗೆದುಕೊಂಡು ಅದಕ್ಕೆ ಮೈದಾ, ರವ, ಫುಡ್ ಕಲರ್ ಅಥವಾ ಅರಶಿನ, ಬೇಕಿಂಗ್ ಸೋಡಾ, ಮೊಸರು ಹಾಕಿ ಚೆನ್ನಾಗಿ ಮಿಕ್ಸ್ ಮಾಡಿಕೊಳ್ಳಬೇಕು. 
  • ಈಗ ಸ್ವಲ್ಪ ನೀರು ಹಾಕಿ ಇಡ್ಲಿ ಹಿಟ್ಟಿನ ಹದಕ್ಕೆ ಜೆಲಾಬಿ ಮಿಶ್ರಣವನ್ನು ತಯಾರು ಮಾಡಿ ೧೦ ನಿಮಷಗಳ ಕಾಲ ಹಾಗೆ ಬಿಡಬೇಕು. 
  • ಈಗ ಒಂದು ಪಾತ್ರೆ ತೆಗೆದುಕೊಂಡು ಅದಕ್ಕೆ ಸಕ್ಕರೆ ಮತ್ತು ೧ ಕಪ್ ನೀರು ಹಾಕಿ ಕುದಿಯಲು  ಬಿಡಬೇಕು. ಸಕ್ಕರೆ ಕರಗಿದ ನಂತರ ೩ ನಿಮಷಗಳ ಕಾಲ ಕುದಿಸಬೇಕು. ಪಾಕ ತುಂಬ ಗಟ್ಟಿ ಆಗಬಾರದು. ಕೈಯಲ್ಲಿ ಮುಟ್ಟುವಾಗ ಅಂಟು ಅಂಟು ಇರಬೇಕು. 
  • ಮಿಶ್ರಣ ಹತ್ತು ನಿಮಷಗಳ ಕಾಲ ಆಗಿದ್ದರೆ ಒಂದು ಗ್ಯಾಸ್ ಅಲ್ಲಿ ಕರಿಯಲು ಎಣ್ಣೆ ಇಟ್ಟುಕೊಳ್ಳಬೇಕು. 
  • ಜೊತೆಗೆ ಒಂದು ಪೈಪಿಂಗ್ ಬ್ಯಾಗ್ ಅಥವಾ ಕಾಲಿಯಾದ ಸಾಸ್ ಬಾಟಲಿ ಅಥವಾ ಹಾಲಿನ ಕವರ್ ತೆಗೆದುಕೊಂಡು ಅದಕ್ಕೆ ಹಿಟ್ಟು ಹಾಕಬೇಕು. ಹಾಲಿನ ಕವರು ಆದರೆ ಅದರ ಒಂದು ಸೈಡ್ ಹರಿದು ಹಿಟ್ಟು ಹಾಕಿಕೊಳ್ಳಬೇಕು. ಇನ್ನೊಂದು ಸೈಡ್ ಒಂದು ಸಣ್ಣತೂತು ಮಾಡಬೇಕು. 
  • ಈಗ ಎಣ್ಣೆ ಕಾದರೆ ಅದಕ್ಕೆ ಜೆಲಾಬಿ ಆಕಾರದಲ್ಲಿ ಮಿಶ್ರಣವನ್ನು ಬಿಡಬೇಕು. 
  • ೨ ಬದಿ  ಕರಿದ ನಂತರ ಅದನ್ನು ಸಕ್ಕರೆ ಪಕ್ಕಕೆ ಹಾಕಿ ೧೦ ಸೆಕಂಡ್  ಕಾಲ ಅದರಲ್ಲಿ ಬಿಡಬೇಕು. 
  • ೧೦ ಸೆಕಂಡ್ ಕಾಲ ನಂತರ ಅದರಿಂದ ತೆಗೆದರೆ ಜೆಲಾಬಿ ತಯಾರಾಗಿದೆ.

It is very easy to prepare, the only thing is you have to soak the Bengal gram 3 to 4 hours before.
